When the weather gets cold, our appetites change. The weather can change our eating habits, but that doesn't mean we have to stop being healthy.
Additionally, broths and soups are ideal options for maintaining hydration and replenishing nutrients.
Therefore, in this article we will show you step by step how to make a healthy caldo verde by chef Fernanda Lee that will warm you up this winter.
Ingredients
- 4 medium yams
- 1 onion
- 1 cup (tea) of butter lettuce
- 200g of artisanal sausage
- 300ml chicken broth
- Olive oil or ghee butter to taste
- Salt and black pepper to taste
It is possible to replace the artisanal sausage with a leaner meat, such as flank or chuck.
Preparation Method
In a pressure cooker, add the peeled, sliced yams and homemade chicken broth. Then cook for 10 minutes in the pressure cooker, then blend in a blender and set aside.
Grill the cubed homemade sausage in a separate frying pan until it is dry. Return the broth to the pan, add a spoonful of ghee butter, kale, and seasonings of your choice. This recipe uses salt, black pepper, and cumin.
When serving, place the artisanal sausage cubes on top and add whole-wheat croutons or a gluten-free bread roll.
"Vegetables and legumes are excellent! You can combine two or three vegetable options when preparing the broth, along with a protein of your choice," nutritionist Viviane Lago told Brasil de Fato.
