5 healthy recipes to warm you up this winter

The cold weather is knocking on your door! With it comes the desire for warmer, fattier and, consequently, more caloric foods. Between fondue, risottos and chocolates, today we show you 5 low-calorie recipes with nutritious ingredients that will warm you up this season. Let's go!

1- Bela Gil's Pea Soup

The chef and presenter of the program Bela Cozinha on GNT also has a YouTube channel where she promotes conscious and healthy eating. See one of her recipes available in full.

Ingredients:


  • 1 tablespoon extra virgin olive oil
  • 2 medium onions, chopped
  • 4 cloves of minced garlic
  • Sea salt
  • 500g fresh peas (can be frozen)
  • 2 cups coarsely chopped parsley (stem removed)
  • 3 to 4 cups fresh vegetable broth
  • zest of ½ lemon
  • 1 tablespoon lemon juice

Preparation method:


In a large saucepan, heat the olive oil, then add the onions and a few pinches of salt. Cook for about 5 to 10 minutes until golden brown, then add the garlic and cook for three minutes. Add three cups of hot vegetable stock (reserve one cup of the mixture), then add the peas. Bring to a boil and turn off the heat.


Add the chopped parsley and, when it wilts, transfer the soup to a blender and blend until smooth. Finally, add the lemon juice and olive oil, mix and season to taste, then serve.

2- Light mashed potatoes


For this puree you will need the following ingredients:


  • 1 cup diced English potatoes
  • 1 teaspoon of light cream cheese
  • 2 tablespoons of skimmed milk or lactose-free milk
  • Parsley to taste
  • Salt to taste
  • Black pepper to taste

Preparation method

The preparation method is simple. First, cook the potatoes in water, then drain the water and mash the potatoes with a fork or mixer. Add the light cream cheese and milk until desired consistency. When serving, sprinkle with chopped parsley.

3- Creamy spinach soup


For you, soup is dinner, right? This creamy spinach soup contains nutrients such as iron, which is recommended for people with anemia, as well as helping with digestion and improving vision.

Check out the necessary ingredients:


  • 1/2 chopped onion
  • 230g fresh spinach
  • 250ml of whole coconut milk
  • 2 cloves of minced garlic
  • Half to 1 cup of water
  • 1 pinch of nutmeg and pepper a pepper of your choice
  • 1 or 2 tablespoons of butter
  • 1 tablespoon of tapioca flour
  • Salt to taste

In the preparation method, the first step is to melt the butter over medium heat. Gradually mix in the tapioca flour, add the onion and garlic and let it cook for 2 minutes.


Then add the spinach and cook until it softens and reduces in volume. Add the coconut milk, pepper and nutmeg and cook for another 5 minutes.


Finally, slowly add the water and coconut milk. If you notice that the broth is not creamy enough, add a spoonful more tapioca flour, mixing well. Sprinkle with salt and serve.

4- Ricotta and chia cheese bread

Who doesn't love a warm cheese bread? In this recipe you will learn a healthier version of this delicacy from Minas Gerais cuisine!

  • 2 tablespoons ricotta cream
  • 1 cup of sour cassava starch
  • ½ cup ricotta
  • 90 g Greek yogurt
  • 1 tablespoon chia

The preparation method is even easier! Just mix all the ingredients in a bowl until you get a soft dough that doesn't stick to your hands (if necessary, add tapioca flour to make it less sticky).

Finally, form the balls and place in a preheated oven at 180 ºC. Watch the dough rise and remove it when it turns golden brown.

5- Light hot chocolate

This lower-calorie version of the beloved hot chocolate will make your mouth water!

For the ingredients you will need:

  • 2 cups (600ml) skimmed milk
  • 2 dessert spoons of cornstarch
  • 5 tablespoons unsweetened cocoa powder
  • 2 dessert spoons of light cream
  • Sweetener to taste

To prepare, mix the still-cold milk with the cornstarch. Add the chocolate powder and boil. Let it cool a little and gradually add the cream so that it doesn't curdle. Sweeten with sweetener to taste and, if you think it needs it, heat over low heat.
