3 healthy recipes that are perfect for summer: drinks, pies and ice cream

The weather changes our eating habits. Summer calls for refreshing foods that help us stay hydrated. It is also a time when we leave the house more often and are more open to being more sociable. Therefore, in this article we will show you three very refreshing recipes that are the epitome of the hottest season in Brazil.

Since most days in the country are hot, these are excellent dishes and drinks for when the sun is shining. All of the recipes are excellent to share with friends.

Bela Gil's Lemon Pie

Healthy living muse Bela Gil has a delicious lemon pie recipe. It’s not one of the easiest dishes to prepare. However, it’s worth it for the flavor and the amount of functional ingredients.

1 ½ cups oatmeal

2 teaspoons of flaxseed

2 tablespoons of molasses

2 tablespoons ghee

Pinch of sea salt

Filling

1 ½ cups raw cashews, soaked for at least 4 hours

1/3 cup fresh lemon or lime juice

½ cup molasses

1 teaspoon vanilla extract

1 tablespoon lemon zest

Preparation Method

In a large bowl, combine the molasses, ghee, flaxseed, and oat flour. Pour the dough into a springform pan. Bake for 15 minutes and let cool.

Filling

Combine all of the filling ingredients (except the lemon zest) in a blender or food processor. Use your blender to determine whether you want to blend everything at once or pulse the mixture until it’s completely smooth. Scrape the mixture into a medium bowl and add the lemon zest.

Assembly

Arrange the filling on top of the already shaped dough. Decorate with red fruits, mint sprigs and lemon zest.

Mango and ginger ice cream

What goes better with hot days than ice cream? Hard to imagine, right? Although it's delicious, traditional ice cream contains trans fat, sugar and other ingredients that we should consume in moderation. That doesn't mean you'll never eat ice cream, but it's nice to give this healthy version a chance.

An excellent alternative is mango and ginger ice cream. During mango season, the recipe becomes even healthier, as we can buy the freshest fruit and even pick it straight from the tree.

The recipe for this healthy ice cream is very easy, as you can see.

Ingredients:

- 2 pink or palmer mangoes cut

- 2 medium yams, peeled and chopped

- 2 cm of chopped ginger

Preparation method:

Add the mangoes first, then the yam and finally the ginger. Blend everything in a blender and store in a plastic container. Place in the freezer for 8 hours or until frozen.

Pineapple and ginger caipirinha

- 2 small portions of diced pineapple

- 3 small pieces of crushed ginger

- 50 ml of cachaça

- Flaky ice

Yes, it's a sugar-free caipirinha!

Preparation method:

- Put the pineapple and ginger in the glass.

- Crush them with a pestle designed for caipirinhas. If you don't have one, a sanitized knife handle will also work.

- Add the cachaça and mix.

- Add some pineapple pieces.

- Fill with ice.
