Traditional Black Forest Flavor: Four Ingredients, One Unique Combination

Despite being quite popular in Brazil and considered by Brazilians to be one of the best sweet combinations in the world, the Black Forest flavor has German origins.

According to the most common theory, the first dessert made with this characteristic flavor would have been a cake, which was named after the Ginja cherry liqueur (Schwarzwald Kirschwasser), typical of the southeastern region of Germany where the famous Black Forest is located.

So, in addition to the cherry distillate, the traditional Black Forest flavor is made up of three main ingredients: chocolate, whipped cream, and, of course, cherry. They are responsible for forming this incredible combination that explodes in your mouth, capable of awakening the best memories and feelings within us.

Variations of the Black Forest flavor around the world

Like any other recipe, desserts with the Black Forest flavor are modified according to the culture and tradition of each country.

The Swedish version of the cake, called Schwarzwaldtårta, is made with layers of meringue, whipped cream and chocolate for decoration. While the traditional German version, the dessert has, in addition to cherries, a shot of distilled cherry.

In other countries, such as Austria, kirsch is replaced by rum, which slightly alters the flavor. In the United States and Brazil, both cakes and other desserts with the same flavor are prepared without alcoholic beverages.

The inclusion of other ingredients is also very common. In our country, it is possible to find pavés and even Black Forest chocolates with strawberries. Brazilian version of Black Forest flavor: more sugar, less alcohol

We are biased, but some say that the “Brazilianized” version of the Black Forest flavor is among the best in the world.

Our cakes, as we said, do not usually contain alcoholic beverages. Furthermore, the desserts contain more sugar than the original flavor, unlike Germans, for example, who use discrete doses of sugar and go for more cherries and kirsch.

Why not transform the classic Black Forest cake into a fluffy, creamy dessert? You can make the base entirely chocolate, but try adding small pieces of cherry to the fluffy cream. It will taste even better.

Swiss roll

The Swiss roll is very similar to the cake, the only difference is the fun shape. Here, the chocolate dough remains and the filling can be made with whipped cream and small pieces of cherry. Hmm, pieces of strawberries wouldn't go amiss either, huh?


It is important to remember that healthier versions of all these desserts can be made. To achieve this result, you just need to replace some ingredients. Milk chocolate can be replaced with 70% cocoa, sugar with xylitol, and wheat flour with a more nutritious, protein-rich and fibrous option.
