Origin of the Black Forest cake: when and where did this delicacy come from?

The origins of the Black Forest cake are not very clear, however, there are some very interesting theories about when and how this delicacy came about.

One of the oldest references attributes its creation to confectioner Josef Keller, when he worked at Café Agner in Bad Godesberg, located almost 500 km from the Black Forest. Josef is said to have created the dessert in 1915, but from its inception until 1934, it was associated only with high-class confectioneries, sold in several cities in Germany, Austria and Switzerland.

After World War II, in 1949, the sweet was among the most famous German cakes. With the flight of thousands of people who left the country in search of safety, the recipe began to spread around the world, until finally becoming the success it is today.

But what about the name Black Forest?

Contrary to what many people imagine, the cake was not named after the Black Forest (yes, it exists!).

Some theories claim that its name was based on the Ginja cherry liqueur, very typical of that region, also known as Schwarzwälder Kirsch. This is the ingredient that, together with the characteristic touch of the fruit and the alcohol content, gives the cake its flavor.

Some even say that the dessert was inspired by the way young single women in the region dressed at the time. Thus, the white whipped cream was a reference to the color of the sleeves of the dresses, the chocolate, the bodice of the dress and, finally, the cherries, which represented the bollenhut, a hat with red dots used to indicate the marital status of women. Interesting, isn't it?

Same cake, new versions

When it comes to recipes, variations are normal from region to region, from country to country. With the Black Forest cake it is no different.

The basic structure of the dessert has survived for years without any changes, and consists of layers of chocolate cake interspersed with whipped cream, cherries and kirsch. In other countries, such as Austria, it is common to replace this distilled spirit with rum. In the United States, however, the most popular versions are prepared without alcohol.

The Brazilian version of the cake has also undergone some changes. Here, we are used to a sweeter flavor and without alcohol. In addition, some recipes include strawberries and many other delicacies.
